Stuffed vegetables from Nice

Stuffed vegetables from Nice are typical of Nice. There are a multitude of ways to cook them, so there are many different recipes. However, there is a traditional basis. Like many other Nice dishes, they originated in modest culinary circles. Leftover meats were used, such as heels of ham and leftovers from cooked dishes like daube niçoise, or sometimes they were prepared without meat at all. As for vegetables, we used those from the Nice region and, by extension, from the Mediterranean basin.

I first discovered this recipe in 1985, when my parents and I went to eat in the food-trucs on the port of Papeete in Tahiti. So, after 40 years, I've tried to rediscover the taste I loved so much back then and offer you a Chow mein revisited in 2024.

Roast Orloff revisited by Yann, a multitude of flavours

Legend has it that the Orloff roast was invented in the 19th century in honor of Prince Orlov, who was Tsar Nicholas I's representative in Paris. The modern version of this traditional recipe simply consists of interspersing slices of meat and cheese in a roast, before baking it in the oven.
