Stuffed vegetables from Nice are typical of Nice. There are a multitude of ways to cook them, so there are many different recipes. However, there is a traditional basis. Like many other Nice dishes, they originated in modest culinary circles. Leftover meats were used, such as heels of ham and leftovers from cooked dishes like daube niçoise, or sometimes they were prepared without meat at all. As for vegetables, we used those from the Nice region and, by extension, from the Mediterranean basin.

For this revisited birthday strawberry cake, I slightly increased the proportions of my classic sponge cake to be able to use 3 molds of 22 cm in diameter instead of a large mold of 22 cm in diameter and 5 cm in height. I calculated the ingredients again with 5 eggs and then I obviously reduced the cooking time to 7 minutes instead of 20 minutes.

In traditional Niçoise pissaladière, onions are mixed with "Pissalat" sauce (from the Niçois Occitan peis salat, "salted fish"), a paste made by macerating sardines and/or anchovies in coarse salt. Today, given the difficulty of obtaining real Pissalat, it's replaced by anchovy fillets added to the pissaladière. That's what I'd do for this 2024 version of pissaladière.
